The diabetic person must work strictly with their endocrinologist or nutricionist to know how many fats, proteins, vitamins, minerals, fiber and carbohydrates requires your diet. A nutritionist can be very useful in the planification of your new diet regimen.
A person with diabetes type I must eat at the same hour, every day, trying to be coherent with the types of food they eat. This will help them prevent the level of sugar and this way it won’t go up or down unnecesarily.
The person with diabetes type I, and persons with diabetes type II, must followed a balanced diet and fat-low. It would be better if the food contained complex carbohydrates (bread, potatoes, rice, pasta, beans, cereals and vegetables), which are slowly metabolized to glucose. Try to avoid simple carbohydrates (candies, chocolates, sodas or any sweetened beverage and cakes) because these transform into glucose very fast, making the glucose levels (glucemic index) rise abruptly. Another kind of feeding, fats; among which we have; monounsaturated fats, which are generally liquid at room temperature and are found generally in vegetable products, such as: olive oil and peanut oil. The modern investigations indicate that the moderate consume of monounsaturated fats have a favorable effect in the cholesterol levels of the blood. Polyunsaturated fats are those that are found principally in vegetable products, and generally, are liquid at room temperature; such as: safflower oil, sunflower oil, corn oil, soy oil and cotton seed oil, and also margarines made of vegetable oils. If they are consumed with moderation, the polyunsaturated fats (very good for diabetics) can reduce the cholesterol level. Apart from these, the saturated fats, are generally solid at room temperature. Even though they are usually found in animal origin products, saturated fats are found naturally in some vegetable products such as, chocolate and coconut. They are also found in other vegetable products as a result of the hydrogenation process, which converts the polyunsaturated fats in saturated. It is very important to read carefully the products labels. Even if they label indicates correctly that the product "does not contain cholesterol", it can contain a high amount of saturated fats. Among the foods with high levels of saturated fats we have: Greasy cuts of cattle meat, sheep, pork or calf, conserved meats to make sandwichs, birds skin, butter, creamed milk, ice creams, creamy sauces, cheeses made from whole milk, chocolate, coconut, coconut oil, palm oil and hydrogenated vegetable butter or parcially hydrogenated. Finally, the acids trans fats; parcially hydrogenated fats, that are made from vegetable oil put under a process of hydrogenation, in which hydrogen is added to the fats, which solidify. It is calculated that they present in at least 40% of the products that are sold in the supermarket (buns, cookies, fried snacks, margarines, etc) and in most restaurant, because they are used to cook, fry and bake.
Another type of food are the proteins. That’s why we recommend you eat, in small quantities, red meats and low-fat cheeses. However, you must include more fish in your diet, about 2 - 3 days a week. It is good to eat fruits and vegetables; the fruits have to be sugar-low, like apples, and just one portion a day. Besides, it is recommended to ingest at least 25/30 grames of fiber a day. Try to avoid the salt in your foods, because it rises the arterial presion
A) PRINCIPLES OF A HEALTHY DIET FOR DIABETICS:
There are some principles that diabetic patients must consider for a healthy feeding.
In the next sentences you will find a series of adecuate foods to keep the glucemy at a normal level. You must adapt these foods with your homemade recipes so your feeding will be as healthy as possible
- Consume foods that have carbohydrates.
- Consume foods rich in fiber (fruits and vegetables).
- Consume foods that contain integral cereal.
- Reduce the consume of fats.
- Eat red meats every once in a while.
- Do not consume much sugar (in all its forms).
- Reduce the consume of salt.
- Consume very few or even better no alcohol at all. You can drink wine, but not excessively.
B) DAILY DIET FOR DIABETES:
1) Fast:
- Drink the juice of 1/2 litter of grapefruit and/or the water of two boild grapefruits, with their sking on.
2) Breakfast:
- Eat fruit salad; principally peaches, along with almonds, bilberries, chestnuts, bitter melon, raspberry, nuts, cashew, bananas, apples, date, papaya and/or pineapple, lemon juice.
- Eat low-sugar fruit salad: One seedless apple, ¼ lime, water and soy.
- Carrot juice, celery, parsely, spinach, letucce, cucumber, endives, brussel sprouts, green beans, watercresses. You can combine 3 of these fruits to make the salad.
- Tomar jugo de alfalfa o levadura de cerveza.
3) Lunch / Dinner:
- Eat artichokes salad, along or alternatively with carrots, celery, garlic, onions, leek, tomatoe, parsley, avocado, lettuce and/or cucumber, olive oil or fish oil.
- Spinach and 4-5 carrots juice. Eat beet salad, celery and carrots with fish oil.
- Eat blue fish, mung beans, beans, beer yeast, smash pumpkin, eggplant and lemon.Potassiuam soup: Prepare soup with a bunch parsley, a bunch of spinach, 4 – 5 carrots and 2 celery sticks.
Chorophyll juice: 3 beet leaves, a bunch of parsley, a bunch of spinach, 4 carrtos and ½ seedless apple
- Special homemade salad: 3 broccoli flowers, a garlic tooth, 4 - 5 carrots or 2 tomatoes, 2 celery sticks, ½ green pepper.
- Tomatoe salad: a bunch of spinach, a bunch of parsely, 2 tomatoes, ½ green pepper and Tabasco sauce.
- Garlic salad: A bunch of parsley, a garlic tooth, 4 – 5 carrots and 2 celery sticks.
- Calcium Cocktail: 3 Kale leaves, a small bunch of parsleyl, 4-5 carrtos y ½ seedless apple.
- Salad for Pancreas: 3 lettuce leaves, 5-6 carrtos, a bunch of green beans and 2 brussle sprouts.
4) Between foods and before going to bed:
- Drink diabute as time water.
5) Avoid:
- Aspirine, caffeine, efedrine, salt, tobacco
6) Foods that contain natural insulin:
The best treatment for diabetic persons consists on have a natural diet. They must consume foods that reduce the level of sugar in the blood like raw garlics, yacon, olive, onion, beer yeast, because they contain natural insulin.
7) Foods with glucemic porcentage:
a) Foods with low glucemic contents (lower than 55%):
Apples, bananas, carrots, tomatoes, oats, peanut butter, orange juice.
b) Foods with average glucemic content (55-70%):
Melon, pineapple, beet, corn, muesli, integral bread, rye bread, integral rice, integral cookies, berry juice.
c) Foods with high glucemic contect (more than 70%):
Dates, watermelon, turnip, brown bread, white bread, mash potatoes, oven baked potatoes, rice cookies, sweetened beverages, manioc.
8) Beneficial Foods:
a) Vitamine B6 sources:
Kale, spinach, turnip leaves, and green pepper.
b) Vitamine C sources:
Kale, parsley, green pepper and brocoli.
c) Vitamine E sources:
Spinach, asparragus and carrot.
d) Chromium sources:
Potatoe, green pepper, apple, spinach, onions, sprouts, carrots, lettuce, tomatoe, peas.
e) Copper sources:
carrots, garlic and ginger.
f) Magnesium sources:
Beetroot leaves, spinach, parsley and garlic.
g) Manganese sources:
Spinach, beetroot leaves, carrot and brócoli.
h) Potasium sources:
Parsley, swiss chard, garlic and spinach.
i) Zinc sources:
Ginger, parsley, potatoe, garlic and carrot.
9) Other beneficial foods:
Drink black coffee with no sugar; blue berry tea, 2 - 3 times a day, for 5 months approximately for slight diabetes cases.
a) Unrestricted foods:
Cheese (fresh cheese, cottage cheese and borghese cheese; greasy cheese, with moderation); eggs (1 every day); clear soup, oats, tomatoe juice, herbal infusion (without sugar), non-feculentos veggies (cabbage, cauliflower, carrots, spinach, turnips, beans (black; watery), onion, chard, lettuce, parsley, cucumber, eggplant, caigua, radish, watercress, asparragus, celery, cummin, spinach, broccoli and veggies leaves, in general; also avocado, mulberry, figs, grapefruit, lemon and pumpkins. Milk, yogurt. It is good to eat green apples when you wake up.
b) Foods that must be eaten with moderation:
Wholemeal bread, potatoes, peas, beans, cereals, dry fruits, fresh sweet fruit, pasta, tapioca soups, soy, etc. Also, boiled legumes.
c) NOT RECOMMENDED FOODS:
Sugar, syrup, glucose, candies, canned foods, chocolate cookies, lemonade, jam, honey, pudding, soft drinks, chocolates, cakes in general, desserts and all kinds of alcoholic beverages. Avoid also dry figs and raisins.
